How to Make the Ultimate Holiday Eggnog

It's that time of year when we are gathering together with friends, family, 

and loved ones to celebrate the Holidays. Sure you could grab some store made Eggnog, but why when you can create the ultimate recipe at home? All you need is likely already in your kitchen, and if not we'll make sure you've got what you needed added to your next grocery list.

Ingredients:

  • 6 large egg yolks 
  • 1/2 cup granulated sugar
  • 1 cup heavy whipping cream
  • 2 cups milk
  • 1/2 teaspoon of ground nutmeg
  • pinch of salt
  • 1/4 teaspoon vanilla extract
  • ground cinnamon, for topping
  • alcohol optional

Equipment:

  • large bowl
  • whisk
  • small saucepan

Follow these simple steps to get started:

Step 1: In a small saucepan over low heat, combine milk, cinnamon, nutmeg, and vanilla. Slowly bring mixture to a low boil.

Step 2: Meanwhile, in a large bowl, whisk egg yolks with sugar until yolks are pale in color. Slowly add the hot milk mixture to egg yolks in batches to temper the eggs, whisk until combined.

Step 3: Return mixture to saucepan and cook over medium heat until slightly thick but does not boil.

Road tip: Your mixture is perfect when it coats the back of a spoon. If using a candy thermometer, the mixture should reach 160 degrees

Step 4: Remove from heat, stir, and refrigerate until chilled

Step 5: When ready to serve, add your choice of bourbon, whiskey, or run, then garnish with cinnamon. Add some whip cream if you're feeling wild.

Road tip: to make your Eggnog alcoholic, start with 1/4 cup of brandy, bourbon, rum, or whisky. You'll want to add this at the same time as the vanilla (step 1) or after cooling the Eggnog. Add more to taste if desired.

How can you make sure Eggnog is safe to drink?

Eggnog made with raw eggs is safe to drink so long as the eggs have been heated to 160 degrees. This will kill any bacteria, like salmonella, that may be present in the raw eggs. When heating the egg, sugar, and milk mixture, slow and low is the way to go. Stirring the mixture while heating slowing on low gently warms the mixture without scrambling the eggs. Just be sure you take the time to get it to 160 degrees.

Storing your liquid gold Eggnog

Your homemade Eggnog will stay good for several days when stored in the refrigerator covered. Just give it a good stir before serving.
